Evaluación bibliométrica de la presencia de metales pesados en alimentos en la seguridad alimentaria

Esta investigación presenta un análisis bibliométrico sobre la evaluación de la presencia de metales pesados en los alimentos y su impacto en la seguridad alimentaria, con el objetivo de identificar las tendencias y el desarrollo de la investigación en este campo. El estudio abarca el periodo 2025 y se basa en la base de datos Scopus, considerando artículos científicos y aportaciones en conferencias. Para el procesamiento y visualización de los datos se emplearon las herramientas Bibliometrix y VOSviewer. Los resultados evidencian una alta incidencia de metales pesados en los alimentos, lo que repercute significativamente en la seguridad alimentaria, especialmente en países con intensa actividad minera e industrial. En conclusión, la presencia de metales pesados sigue siendo un problema vigente que compromete la inocuidad y calidad de los alimentos a nivel global.
